A new craft beer from Madeira, Pé de Cabra Oak, is making waves in the national beer scene after winning the prestigious national craft beer competition. This unique beverage, created by Beerhouse Funchal, blends traditional flavors with a modern twist, combining elements of dry wine and carefully selected hops to create a complex and sophisticated taste.
The Making of Pé de Cabra Oak: A Blend of History and Innovation
The Pé de Cabra Oak was inspired by the traditional "pé de cabra," a traditional Madeiran drink that originated with dry wine from wooden barrels. To recreate this historic flavor, the team behind Pé de Cabra Oak uses a mix of 30% wine and a selection of hops known as "lobosorás," which contribute to the beer’s unique character. The beer is aged for 34 months in French oak barrels, a process designed to add depth and complexity to the flavor profile.
The choice of French oak is significant. In the past, "pé de cabra" was made using wine that aged in wooden barrels, and the goal was to capture that same complexity in this new craft beer. The decision to mature the beer for over two years adds an authentic touch, tying the modern beverage to its traditional roots.
A Brewing Space Designed for Craftsmanship
The brewing process takes place in a dedicated space that combines state-of-the-art equipment with traditional techniques. The facility includes a mashing area, fermentation tanks, and maturation tanks, as well as the French oak barrels where the beer undergoes its long aging process. This blend of old and new ensures that each batch of Pé de Cabra Oak is crafted with the utmost care and attention to detail.
One of the founders of the beer, emphasizes the importance of creating a product that honors tradition while introducing new ideas. "We wanted to recreate the complexity of the original drink and introduce a new twist that appeals to contemporary tastes," says Ramiro.
Rising Demand and Recognition Beyond Portugal
Since winning the national craft beer competition, demand for Pé de Cabra Oak has surged. The victory has put the beer on the map, and it is now in high demand both within Portugal and internationally. While production has increased to meet the growing interest, much of the stock has already been sold.
